Almond Milk Orange Blossom Energy Gummy With Guayusa

Combine almond milk, honey, orange blossom flavor, and guayusa to create these small but mighty energy gummies. Ingredients
Serves: 1 serving (20g)
  • 1.21g Agar
  • 0.6g Locust Bean Gum
  • 0.54g Sodium Citrate
  • 7.24g Sugar (#1)
  • 24.93g Almond Milk
  • 37.82g 42 DE Tapioca Syrup
  • 12.16g Honey
  • 15.2g Sugar (#2)
  • 0.2g Orange Blossom Flavor
  • 0.1g Guayusa
  • As needed sugar (For Sanding)

Preparation
  1. Combine Agar, Locust Bean Gum, Sodium Citrate, and Sugar # 1. While stirring add to the almond milk and mix until lump free. Then heat to 175-220F and bring to a boil for about 3 minutes or until the solids have dissolved and the liquid is smooth with no graininess.
  2. Add tapioca syrup and honey to the batch and heat to 185F, mix for 2 minutes.
  3. Add sugar # 2 to the batch and mix for 3 minutes or until fully dissolved.
  4. Increase heat to 275F and cook to 78-80 Brix.
  5. Cool to 180F.
  6. Add the orange blossom flavoring to the batch and mix until combined.
  7. Deposit the gummy base into a pre waxed silicon mold. Keep the slurry hot at 180- 160F while depositing.
  8. Remove from mold and cure in a cool dry room until water activity is 0.65 or below.
  9. Once cured, transfer gummies into a bowl and toss in sanding sugar.
