Koji Almond Jerky

Developed by Chef Henry Hill (Hill's Research Kitchen) on behalf of the Almond Board of California Jerky continues to see explosive growth as consumers seek high-protein, functional snacks. As the category evolves, so does the demand for exciting, flavorful and plant-based options. Enter Koji Almond Jerky, which harnesses the power of almonds and koji fermentation to develop deep, savory umami notes.

  • 600g fire roasted cauliflower, shaved
  • 450g fire roasted broccoli, shaved
  • 550g, fire roasted beets, shaved
  • 900g, fire roasted onions, shaved
  • 450g, fire roasted mushrooms, shaved
  • 400g, fire roasted celery, shaved
  • 850g, fire roasted carrots, shaved
  • 600g, fire roasted eggplant, shaved
  • 40g, vegetable concentrate demi-glace
  • 7g soy sauce
  • 25g defatted almond protein
  • 4g garlic salt
  • 9g liquid koji
  • 2.7g liquid smoke (Hickory)
  • 5g al pastor seasoning blend
  • 3g Activa RM (contains trace dairy protein, but can be formulated with a vegan version)

  • Dehydrator
Preparation
Directions
  1. Combine all vegetables together in a standing mixer.
  2. Add the defatted almond flour, garlic salt and al pastor seasoning.
  3. Add soy sauce, vegetable concentrate, liquid koji, and liquid smoke. Mix to combine.
  4. Once all ingredients have combined, roll out to sheets and transfer to a dehydrator set at 165°F for 3 hours or until water activity is below 0.65.
Chef Notes:
  1. This recipe can offer versatile building blocks for new products. Leverage the jerky’s umami taste as a salad topper or as an addition to grain bowls for a protein and flavor boost. Shred the jerky into fine crumbles to mimic bacon bits. Combine the jerky pieces with complementary foods like roasted chickpeas, flavored almonds and dried fruit for a delicious trail mix.
