Almond Flour Pastry Pocket

This thoughtfully crafted item features a tender pastry made with almond flour, packed with a rich almond butter filling.

Dough - Makes 100g
  • 35.56g All Purpose Flour
  • 17.78g Almond Flour
  • 4.44g Oat Flour
  • 17.78g Sugar
  • 1.78g Kosher Salt
  • 2.67g Refined Almond Oil
  • 4.44g Vegetable Shortening
  • 11.56g Water
  • 1.78g Almond Butter, smooth
  • 2.22g Vital Wheat Gluten
Filling - Makes 100g
  • 50g White chocolate
  • 10.71g Almond Butter
  • 21.43g Caramel syrup (contains milk solids)
  • 17.86g Invert Sugar
Vanilla Glaze- Makes 100g
  • 75g powdered sugar
  • 20g egg whites
  • 5g bourbon vanilla flavor
Equipment
  • Food processor
  • Rolling pin
  • Dehydrator
Preparation
Directions
  1. For the pastry pocket dough, combine all the dry ingredients in a food processor. Pulse to combine.
  2. Next add the fats and pulse to combine.
  3. Add the water and pulse to combine.
  4. Form into a dough and roll out to 3mm thickness.
  5. Dock the dough and fill with the desired filling.
  6. Top with the other piece of dough and press to seal the edges.
  7. Transfer to a freezer and freeze.
  8. Heat the oven to 325°F.
  9. Bake for 20 minutes.
  10. Remove from the oven and cool.
  11. Top with the glaze, then transfer to a dehydrator to allow the glaze to dry completely.

  1. This recipe can offer versatile building blocks for new products. The dough stays tender at low water activity levels and is great for anything filled, like a hand pie, pie dough or hot pocket.
