Almond Caramel Stroopwafel

This stroopwafel is made with delicate almond flour wafers infused with warm cinnamon and aromatic vanilla paste, creating an irresistibly fragrant foundation for its caramel filling. Each bite of this Dutch classic delivers layers of sophisticated flavor that’s enhanced by the subtle nuttiness of almond flour. Waffle Ingredients (by weight)
  • 382g Bread Flour
  • 86g Almond Flour
  • 220g Butter, melted
  • 172g Sugar
  • 7g Instant Dry Yeast
  • 2g Baking Powder
  • 48g Whole Milk
  • 7.2g Vanilla Paste
  • 16g Honey
  • 44g Eggs
  • 2.8g Salt
  • 4g Cinnamon, Ground
  • 4g Almond Extract (optional)
Caramel Filling Ingredients (by weight)
  • 165g Sugar
  • 123g Heavy Cream
  • 81g Glucose
  • 4.5g Vanilla Paste
  • 2.5g Sea Salt

Preparation
Waffle Preparation Directions
  1. Combine the flour, butter, sugar, yeast, salt, and baking powder.
  2. Place in a stand mixer with the dough hook attachment.
  3. Add the milk, honey, and eggs.
  4. Knead the dough on speed 1 until dough becomes smooth.
  5. Cover with plastic wrap and allow to rest for 1 hour.
  6. Divide into 23g (0.77 oz) pieces and round each into a ball.
  7. Lightly flatten each disk to about 5 mm (0.2 inches) high.
  8. Preheat the waffle iron to 375°F (190°C).
  9. Check the temperature of the iron using an infrared thermometer.
  10. Lightly spray the center of the waffle iron with nonstick cooking spray.
  11. Place one piece of dough in the center of the preheated waffle iron.
  12. Close the waffle iron and apply gentle pressure without pressing all the way to the bottom.
  13. The dough should be about 2-3 mm (0.08-0.12 inches) thick.
  14. Bake for 1.5 to 2 minutes, or until golden brown. Time may vary depending on your waffle iron.
  15. Remove the waffle from the waffle iron.
  16. Using a 7.5 cm (3-inch) cutter, cut the waffle into a clean, round shape.
  17. Split the waffle horizontally using a slicing knife and place the halves on a flat surface to cool.
Caramel Filling Preparation Directions
  1. Shake the cream and glucose with the scraped vanilla bean. Reserve covered to keep hot.
  2. Caramelize the sugar using the dry method to a medium caramel.
  3. Turn off the heat and add the hot cream mixture slowly, stirring constantly.
  4. Return the mixture to medium heat and cook to a temperature of 237°F (114°C).
  5. Remove from heat and allow to cool
Assembly & Finishing Directions
  1. Gently warm the caramel in a microwave until fluid.
  2. Pipe 12g of filling onto the cut side of one half.
  3. Top with the second half, cut side down.
  4. Press gently to spread the caramel evenly to the edge.
  5. Allow to cool completely before packaging.
