This version features a crisp, crunchy almond cookie paired with a whipped lemon-almond butter cream filling that melts in your mouth. Cookie Assembly - Makes 100g
  • 17.94g Almond Flour
  • 9.57g Tapioca Starch
  • 3.16g Corn Starch
  • 12.67g Powdered Sugar
  • 15.95g Granulated Sugar
  • 3.19g Glycerin
  • 5.32g Almond Butter
  • 3.16g Palm Oil
  • 12.76g Invert Sugar
  • 3.16g Soy Lecithin
  • 1.38g Baking Powder
  • 0.31g Salt
  • 0.31g Diastatic Malt Powder
  • 1.39g Almond Extract
  • 0.31g Xanthan Gum
  • 6.23g Water
  • 3.19g Oat Flour
Lemon Almond Butter Cream Filling - Makes 100g
  • 3.74g Defatted Almond Flour
  • 35.25g Almond Butter, smooth
  • 0.3g Soy Lecithin
  • 0.71g Sea Salt
  • 0.1g Single Strength Lemon Oil
  • 45.83g Powdered Sugar

  • Thermometer

  • Planetary Mixer
Preparation
Directions - for the cookie
  1. Combine all dry cookie ingredients and mix to combine
  2. Combine all wet cookie ingredients and mix to combine
  3. Transfer the dry cookie ingredients to a planetary mixer and mix to combine
  4. Scoop the dough to a baking sheet and transfer to the oven to bake for 20 minutes at 325°F
  5. Remove and allow to cool on a rack
Directions - for the filling
  1. Stir all ingredients to combine
For the final assembly
  1. Scoop the desired amount of lemon almond butter cream and spread in between two of the biscuit cookies
